As motorists took to the roadways during the 1920s, a market for roadside dining emerged. The need to feed travelers began as small, with makeshift, privately-owned establishments, but eventually grew to change the whole face of the restaurant business. Some of the largest, most profitable companies in existence today began serving up quick meals from tiny roadside stands on America's highways.
